For the Cherry Mousse:

  • 1 cup (240 ml) cherry juice (or cherry puree)
  • 2 tbsp sugar (adjust to taste)
  • 2 tsp gelatin powder (or gelatin sheets)
  • 2 tbsp cold water (for blooming gelatin)
  • 1 cup (240 ml) heavy cream, chilled

For Topping:

  • Whipped cream (sweetened)
  • Fresh cherries with stems

Instructions

  1. Prepare the Gelatin Base Sprinkle gelatin over cold water and let it bloom for 5 minutes. Heat the cherry juice with sugar until warm (don’t boil). Stir in the bloomed gelatin until fully dissolved. Let the mixture cool to room temperature.
  2. Whip the Cream In a chilled bowl, whip heavy cream until soft peaks form. Gently fold the cooled cherry mixture into the whipped cream until smooth.
  3. Chill the Mousse Pour into dessert glasses. Refrigerate for at least 2–3 hours until set.
  4. Decorate Pipe swirls of whipped cream on top. Garnish with fresh cherries.

Notes

  • Ensure the gelatin is completely dissolved for a smooth texture.
  • Chill the dessert glasses before pouring in the mousse for better setting.
