  • 3/4 cup low sodium chicken broth
  • 1/2 cup low fat milk, or milk of choice
  • 1/3 cup frozen peas
  • 1/3 cup frozen corn
  • 1 1/2 cups shredded part-skim mozzarella cheese
  • 1/3 cup shredded Parmesan cheese

Garnish:

  • Flat leaf parsley
  • Fresh thyme

Instructions

  1. Preheat the Oven: Preheat oven to 425°F (220°C) and place a pizza stone in the oven if using.
  2. Prepare the Pizza Dough: Roll out the pizza dough, transfer to a baking sheet or pizza peel.
  3. Make the Sauce: Melt butter in a skillet, cook onion, carrot, thyme, salt, and pepper. Add flour, then gradually whisk in broth and milk. Stir in chicken, peas, and corn.
  4. Assemble the Pizza: Spread the chicken pot pie mixture over the pizza dough, top with cheeses.
  5. Bake: Transfer to oven and bake for 15-18 minutes until golden and bubbly.
