Pizza Dough:
Chicken Pot Pie Filling:
- 1 large boneless skinless chicken breast, cooked and diced
- 2 tablespoons butter
- 1/3 cup diced yellow onion
- 1 carrot, diced
- 1 teaspoon fresh thyme, chopped
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 tablespoons all-purpose flour
- 3/4 cup low sodium chicken broth
- 1/2 cup low fat milk, or milk of choice
- 1/3 cup frozen peas
- 1/3 cup frozen corn
- 1 1/2 cups shredded part-skim mozzarella cheese
- 1/3 cup shredded Parmesan cheese
Garnish:
- Flat leaf parsley
- Fresh thyme
- Preheat the Oven: Preheat oven to 425°F (220°C) and place a pizza stone in the oven if using.
