  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Alfredo Sauce:

  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 8 oz pasta (fettuccine or penne)
  • 2 cups fresh spinach, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Mix ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, salt, and pepper. Form into meatballs.
  2. Bake meatballs on a lined baking sheet for 15-18 minutes until cooked through.
  3. Cook pasta according to package instructions; drain.
  4. In a skillet, melt butter, sauté garlic until fragrant.
  5. Add heavy cream; simmer until slightly thickened. Stir in Parmesan, salt, and pepper.
  6. Add chopped spinach; cook until wilted.
  7. Toss pasta and meatballs in spinach Alfredo sauce.

Notes
