For the Meatballs:
- 1 lb ground chicken
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- Salt and pepper to taste
For the Alfredo Sauce:
- 3 tbsp butter
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 8 oz pasta (fettuccine or penne)
- 2 cups fresh spinach, chopped
- Preheat oven to 400°F (200°C). Mix ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, salt, and pepper. Form into meatballs.
- Bake meatballs on a lined baking sheet for 15-18 minutes until cooked through.
- Cook pasta according to package instructions; drain.
- In a skillet, melt butter, sauté garlic until fragrant.
- Add heavy cream; simmer until slightly thickened. Stir in Parmesan, salt, and pepper.
- Add chopped spinach; cook until wilted.
- Toss pasta and meatballs in spinach Alfredo sauce.
