  • 1 lb (450g) ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil for frying

For the spinach Alfredo sauce:

  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Prepare the meatballs: Combine ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, oregano, basil, salt, and pepper. Form into meatballs and bake.
  3. Cook the meatballs: Brown the meatballs in a skillet, then bake until fully cooked.
  4. Make the sauce: In the same skillet, cook garlic in butter, add spinach, cream, Parmesan, salt, and pepper. Simmer until thickened.
  5. Combine and serve: Toss the cooked meatballs in the spinach Alfredo sauce. Garnish with parsley and serve.
