For the Wraps:

  • 4 large tortillas or flatbreads
  • 1 cup cooked chickpeas (canned or fresh)
  • 8 oz halloumi cheese, sliced
  • 1 cup mixed salad greens
  • 1 small cucumber, sliced thin
  • 1 small red bell pepper, sliced thin
  • 1 small carrot, shredded
  • 2 tbsp olive oil

For the Yogurt Sauce:

  • ½ cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp garlic, minced
  • Salt and pepper to taste
  • 1 tsp fresh dill or parsley, chopped

Instructions

  1. Prepare the halloumi: Heat olive oil in a skillet over medium heat and fry halloumi slices for 2–3 minutes per side until golden brown and slightly crispy.
  2. Make the yogurt sauce: In a small bowl, combine plain Greek yogurt, lemon juice, minced garlic, chopped dill or parsley, salt, and pepper. Mix until smooth and set aside.
  3. Assemble the wraps: Lay each tortilla flat on a clean surface. Spread a spoonful of the yogurt sauce evenly over each tortilla. Add cooked chickpeas, fried halloumi slices, mixed salad greens, cucumber slices, red bell pepper slices, and shredded carrot on top.
  4. Fold and serve: Roll the tortillas tightly to enclose the fillings. Slice in half if desired and serve immediately for the best flavor and texture.

Notes

  • For extra crunch, sprinkle toasted nuts or seeds inside the wrap before rolling.
  • You can assemble the wraps ahead of time but keep the yogurt sauce separate until just before serving to prevent sogginess.
