  • 1 lb (450 g) flank steak, thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch

  • 2 tbsp vegetable or peanut oil
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated

For the Sauce

  • ¼ cup beef broth
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp cornstarch mixed with 2 tsp water (slurry)
  • ½ tsp black pepper

For Serving

  • Steamed rice or noodles

Instructions

  1. Marinate the steak: In a bowl, toss the thinly sliced flank steak with soy sauce, cornstarch, sesame oil, salt, and pepper. Let it marinate for 10 to 15 minutes to tenderize and infuse flavor.
  2. Prepare the stir-fry: Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Stir-fry the marinated steak for 2 to 3 minutes until browned but not fully cooked. Remove the steak from the pan and set aside.
  3. Cook the vegetables: Add the remaining tablespoon of oil to the pan. Stir-fry the sliced onion, red and green bell peppers, minced garlic, and grated ginger for 3 to 4 minutes, until the vegetables are slightly tender but still crisp.
  4. Make the sauce: In a small bowl, combine the beef broth, soy sauce, oyster sauce, and black pepper. Pour this sauce into the pan with the vegetables and bring it to a gentle simmer. Add the cornstarch slurry to the pan and stir until the sauce thickens.
  5. Combine steak and vegetables: Return the partially cooked steak to the pan and toss everything together to coat the steak and vegetables with the thickened sauce. Cook for an additional 1 to 2 minutes until the steak is fully cooked through and the sauce has the desired consistency.
  6. Serve: Serve the Chinese Pepper Steak hot over steamed rice or noodles for a hearty and delicious meal.
