  • 1/4 red onion, finely chopped

  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice

Instructions

  1. Marinate the chicken: Rub the chicken evenly with olive oil, Jamaican jerk seasoning, salt, and black pepper. Cover the chicken and refrigerate to marinate for at least 30 minutes, or up to 2 hours to allow the flavors to penetrate deeply.
