  • 1 tsp baking powder
  • ½ tsp baking soda

  • ½ cup (120 ml) vegetable oil
  • 2 large eggs, room temperature
  • ½ cup (120 ml) buttermilk (or milk + 1 tsp vinegar)
  • 1 tsp vanilla extract
  • ½ cup (120 ml) hot coffee (or hot water)

For the frosting:

  • 1 cup (230 g) unsalted butter, softened
  • 2 ½ cups (300 g) powdered sugar
  • ½ cup (50 g) unsweetened cocoa powder
  • 23 tbsp heavy cream (adjust for consistency)
  • 1 tsp vanilla extract

Instructions

  1. Make the cupcakes – Preheat oven. Whisk dry ingredients in one bowl and wet ingredients in another. Combine and mix until smooth. Add hot coffee, pour into liners, and bake.
  2. Make the frosting – Beat butter until creamy. Gradually add powdered sugar and cocoa, then mix in vanilla and cream until smooth.
  3. Decorate – Pipe frosting on cooled cupcakes and garnish with berries and chocolate.
