  • 1 tsp baking powder

  • ½ cup (120 ml) vegetable oil
  • 2 large eggs, room temperature
  • ½ cup (120 ml) buttermilk (or milk + 1 tsp vinegar)
  • 1 tsp vanilla extract
  • ½ cup (120 ml) hot coffee (or hot water)

For the frosting:

  • 1 cup (230 g) unsalted butter, softened
  • 2 ½ cups (300 g) powdered sugar
  • ½ cup (50 g) unsweetened cocoa powder
  • 23 tbsp heavy cream (adjust for consistency)
  • 1 tsp vanilla extract

Toppings:

  • Fresh raspberries & blackberries
  • Chocolate squares or chunks
  • Chocolate shavings (optional)

Instructions

  1. Make the cupcakes: Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt. In another bowl, whisk oil, eggs, buttermilk, and vanilla. Slowly add wet ingredients to dry, mixing until smooth. Stir in hot coffee. Pour into cupcake liners and bake for 18–20 minutes. Let cool.
  2. Make the frosting: Beat butter until creamy. Gradually add powdered sugar and cocoa, beating until fluffy. Mix in vanilla and heavy cream until smooth and pipeable.
  3. Decorate: Pipe frosting in swirls over cooled cupcakes and garnish with chocolate squares, fresh raspberries, and blackberries.
