Instructions

  1. Bake the Chocolate Cake: Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch pan with parchment paper. In a bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt to combine. In a separate large bowl, beat the eggs and sugar until smooth. Add the buttermilk, vegetable oil, and vanilla extract, mixing well. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Finally, stir in the hot coffee or water. Pour the batter into the prepared pan and bake for 25–30 minutes or until a toothpick inserted into the center comes out clean. Let cool completely, then crumble into chunks.
  2. Make the Cream Filling: In a mixing bowl, whip the heavy cream until soft peaks form. In another bowl, beat the mascarpone cheese or softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy. Gently fold the whipped cream into the mascarpone mixture to create a light, fluffy cream filling.
  3. Prepare the Ganache: Heat the heavy cream in a small saucepan until it begins to steam, but not boiling. Pour the hot cream over the chocolate chips in a heatproof bowl and let sit for 2 minutes to soften the chocolate. Stir or whisk gently until smooth and glossy.
  4. Assemble the Jars: Begin by adding a layer of chocolate cake crumbles to the bottom of each serving jar. Spoon a layer of mascarpone cream over the cake. Drizzle a spoonful of warm chocolate ganache on top of the cream. Repeat the layers if the jars are tall enough, finishing with a top layer of fresh mixed berries. Drizzle with remaining ganache and dust lightly with powdered sugar for an elegant finish.
