Brownie Base:

  • 1 cup (225g) unsalted butter
  • 1 ½ cups (300g) granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • ½ cup (60g) cocoa powder
  • ½ tsp salt
  • 1 cup (170g) dark chocolate chunks

Ice Cream Layer:

  • 3 cups vanilla ice cream (slightly softened)

Chocolate Ganache:

  • 200g semi-sweet chocolate, chopped
  • 200 ml heavy cream

Topping:

  • 9 chocolate pralines or truffles

Instructions

  1. Make the Brownie Base – Preheat oven to 175°C (350°F). Melt butter and sugar, whisk in eggs and vanilla. Fold in flour, cocoa powder, salt, and chocolate. Pour into lined pan, bake 25–30 minutes, then cool.
  2. Add the Ice Cream Layer – Spread softened ice cream over the cooled brownie. Freeze for at least 3 hours.
  3. Prepare Ganache – Heat cream, pour over chocolate. Let sit, then stir until smooth.
  4. Assemble – Cut cake, pour ganache over each square, place a praline on top.
  5. Serve – Let soften before serving. Enjoy chilled!
