For the cupcakes:

  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 cup sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 large egg
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot water
  • 1 tsp vanilla extract

For the cheesecake filling:

  • 8 oz (225 g) cream cheese, softened
  • ⅓ cup sugar
  • 1 egg
  • ½ tsp vanilla extract

For the ganache topping:

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • Chocolate chunks or sprinkles (for garnish)

Instructions

  1. Make the cupcakes: Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners. In a bowl, whisk together flour, cocoa, sugar, baking soda, baking powder, and salt. Add egg, milk, oil, and vanilla. Mix until combined. Slowly stir in hot water.
  2. Make cheesecake filling: In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
  3. Assemble: Fill cupcake liners halfway with chocolate batter. Spoon cheesecake mixture into the center. Top with more chocolate batter.
  4. Bake: Bake for 20–22 minutes until set. Let cool.
  5. Make ganache: Heat cream, pour over chocolate chips, stir until smooth. Let cool slightly.
  6. Top & garnish: Spread ganache over cupcakes. Garnish with chocolate chunks or sprinkles.
