For the cupcakes:
- 1 cup all-purpose flour
- ½ cup cocoa powder
- 1 cup sugar
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 large egg
- ½ cup milk
- ½ cup vegetable oil
- ½ cup hot water
- 1 tsp vanilla extract
For the cheesecake filling:
- 8 oz (225 g) cream cheese, softened
- ⅓ cup sugar
- 1 egg
- ½ tsp vanilla extract
For the ganache topping:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- Chocolate chunks or sprinkles (for garnish)
- Make the cupcakes: Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners. In a bowl, whisk together flour, cocoa, sugar, baking soda, baking powder, and salt. Add egg, milk, oil, and vanilla. Mix until combined. Slowly stir in hot water.
- Make cheesecake filling: In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
- Assemble: Fill cupcake liners halfway with chocolate batter. Spoon cheesecake mixture into the center. Top with more chocolate batter.
- Bake: Bake for 20–22 minutes until set. Let cool.
- Make ganache: Heat cream, pour over chocolate chips, stir until smooth. Let cool slightly.
- Top & garnish: Spread ganache over cupcakes. Garnish with chocolate chunks or sprinkles.
