For the Sponge Cake:
- 4 large eggs
- 100 g (½ cup) granulated sugar
- 65 g (½ cup) all-purpose flour
- 25 g (3 tbsp) cocoa powder
- 1 tsp baking powder
- Pinch of salt
- 2 tbsp milk
- 1 tsp vanilla extract
For the Coffee Cream Filling:
- 200 ml (¾ cup) heavy whipping cream, chilled
- 100 g (½ cup) mascarpone or cream cheese (optional for extra richness)
- 2 tbsp powdered sugar
- 2 tsp instant coffee dissolved in 1 tbsp hot water (cooled)
For Decoration:
- Cocoa powder (for dusting)
- Chocolate shavings or chopped chocolate
- Optional: small meringues or chocolate pearls
- Prepare the Sponge Cake Preheat oven to 180°C (350°F). Line a 10×15-inch jelly roll pan with parchment paper. In a large bowl, beat eggs and sugar until pale and tripled in volume. Sift together flour, cocoa powder, baking powder, and salt. Gently fold in milk and vanilla. Bake for 10–12 minutes.
- Roll the Sponge Lay a towel dusted with cocoa powder, turn out the warm cake onto it, peel off parchment, and gently roll. Let cool rolled up.
- Make the Coffee Cream Beat cream, mascarpone, sugar, and coffee until stiff. Chill.
- Assemble the Roll Unroll sponge, spread coffee cream, roll up, and place on a platter.
- Decorate Dust with cocoa, sprinkle with chocolate, and add optional decorations.
