For the Strawberry Layer:

  • 1 pound fresh strawberries, hulled
  • 2 tablespoons granulated sugar

For the Topping:

  • ½ cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Prepare the Strawberries: Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan and line it with parchment paper, leaving an overhang for easy removal. In a medium bowl, toss the hulled strawberries with the 2 tablespoons of sugar. Set aside to macerate while you prepare the brownie batter.
  2. Create the Brownie Base: In a medium saucepan over low heat, melt the butter. Remove from heat and immediately whisk in the sugar, cocoa powder, and salt until smooth. The mixture will be slightly gritty. Allow it to cool for 5 minutes.
  3. Finish the Batter: Vigorously whisk the three cold eggs and vanilla extract into the warm chocolate mixture until the batter becomes thick, smooth, and glossy. Gently fold in the flour until just combined and no dry streaks remain. Avoid overmixing.
  4. Assemble and Bake: Pour the brownie batter into your prepared pan and spread it evenly. Arrange the macerated strawberries in a single layer on top of the batter, pressing them down slightly. Bake for 40-50 minutes, or until the edges are set and a toothpick inserted into the brownie comes out with moist crumbs.
