Ingredients

Scale

For the Cake:

  • 1 3/4 cups all-purpose flour
  • 1 cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water

For the Chocolate Frosting:

  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Prepare the pans: Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until evenly combined.
  3. Combine wet ingredients: In another bowl, beat the eggs, granulated sugar, brown sugar, buttermilk, vegetable oil, and vanilla extract until smooth and well blended.
  4. Combine wet and dry mixes: Gradually add the dry ingredients into the wet mixture, mixing until just combined. Then, slowly stir in the hot water, ensuring the batter is smooth and fluid.
  5. Bake the cake: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and let cool completely in pans on a wire rack.
  6. Prepare the frosting: Beat the softened butter with cocoa powder, powdered sugar, and vanilla extract. Gradually add the heavy cream while continuing to beat until the frosting is smooth, creamy, and fluffy.
  7. Assemble the cake: Once the cake layers have cooled fully, spread a generous amount of chocolate frosting on the first layer, then top with the second. Frost the top and sides as desired. Slice and serve.

Notes

  • Ensure cakes are completely cooled before frosting to prevent melting.
  • Use high-quality cocoa powder for a richer chocolate flavor.
  • Buttermilk adds moisture and a slight tang, but you can substitute with milk plus a teaspoon of lemon juice if needed.
  • For a dairy-free alternative, use plant-based milk and butter substitutes.
  • Store leftover cake covered at room temperature for up to 3 days, or refrigerate.
