Cake:
- 1 3/4 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 1 cup strong brewed coffee, hot
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
Peanut Butter Frosting:
- 1 cup unsalted butter, softened
- 1 1/2 cups creamy peanut butter
- 3–4 cups powdered sugar
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Chocolate Ganache Topping:
- 1/2 cup heavy cream
- 4 ounces semi-sweet chocolate, chopped
- 1 tablespoon unsalted butter
- Chocolate chips for garnish
- For the Cake: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt. In another bowl, combine buttermilk, hot coffee, oil, eggs, and vanilla. Mix wet ingredients into dry until smooth. Divide batter into pans and bake for 30-35 minutes. Cool on a rack.
- Peanut Butter Frosting: Beat butter and peanut butter until creamy. Gradually add sugar, then mix in cream and vanilla until fluffy.
- For the Ganache: Place chocolate and butter in a bowl. Heat cream until simmering, then pour over chocolate. Let sit for 5 minutes, then whisk until smooth.
