Raspberry Mousse:

  • ¼ cup sugar

  • 2 tsp powdered gelatin
  • ¼ cup cold water
  • 1 ½ cups heavy whipping cream 🥛
  • 2 tbsp powdered sugar

Instructions

  1. Bake chocolate cake according to package directions. Cool completely.
  2. Melt chocolate for mousse over a double boiler or microwave; let cool slightly.
  3. Whip heavy cream with powdered sugar and vanilla to soft peaks. Fold melted chocolate into whipped cream gently. Chill.
  4. For raspberry mousse, blend raspberries, sugar, and lemon juice. Strain to remove seeds.
  5. Sprinkle gelatin over cold water; let bloom 5 minutes. Heat gently until dissolved, then mix into raspberry puree.
  6. Whip heavy cream with powdered sugar to soft peaks, fold into raspberry mixture. Chill until slightly set.
  7. Layer cake, chocolate mousse, and raspberry mousse in a springform pan. Chill for at least 4 hours or overnight.
