Ingredients

Scale

For the Chocolate Cake Layers:

  • 250 g all-purpose flour
  • 300 g granulated sugar
  • 75 g unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 240 ml buttermilk, room temperature
  • 120 ml vegetable oil
  • 2 large eggs, room temperature
  • 240 ml hot coffee (or boiling water)
  • 1 tsp vanilla extract

For the Strawberry Filling:

  • 300 g fresh strawberries, hulled and sliced
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

For the Whipped Cream Frosting:

  • 500 ml heavy whipping cream
  • 80 g powdered sugar
  • 1 tsp vanilla extract

For Decoration:

  • Fresh whole strawberries
  • Chocolate shavings or curls

Instructions

  1. Prepare the Cake Pans: Preheat the oven to 175°C (350°F). Grease and line two 9-inch round cake pans with parchment paper to ensure the cakes don’t stick after baking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt until well combined and aerated.
  3. Add Wet Ingredients: Add the buttermilk, vegetable oil, eggs, and vanilla extract to the dry mix. Stir until the batter is smooth and uniform in texture.
  4. Incorporate Hot Coffee: Gradually pour in the hot coffee while stirring continuously. The batter will become thin; this helps produce a moist cake texture.
  5. Bake the Cake Layers: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely on a wire rack.
  6. Prepare Strawberry Filling: In a small bowl, combine the sliced strawberries with granulated sugar and lemon juice. Let the mixture sit for 10 minutes to allow the strawberries to release their juices and sweeten.
  7. Whip the Cream Frosting: Using an electric mixer, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form, ensuring a light and fluffy frosting.
  8. Assemble the Cake: Place one cake layer on your serving plate. Spread a generous layer of whipped cream over the top, then evenly distribute the macerated strawberry slices on top of the cream.
  9. Add Second Layer & Frost: Place the second cake layer over the strawberries. Frost the entire cake evenly with the remaining whipped cream, smoothing the surface and sides.
  10. Decorate and Chill: Garnish the top of the cake with fresh whole strawberries and chocolate shavings or curls for an elegant finish. Chill the cake in the refrigerator for at least 1 hour before slicing and serving to allow flavors to meld.

Notes

  • Ensure ingredients like buttermilk and eggs are at room temperature for better batter consistency.
  • If you don’t have buttermilk, mix 240 ml milk with 1 tbsp lemon juice and let sit for 5 minutes as a substitute.
  • Use freshly brewed hot coffee for a richer chocolate flavor; decaf works fine too.
  • For firmer frosting, chill the mixing bowl and beaters before whipping the cream.
  • The cake is best stored refrigerated and consumed within 2 days for optimal freshness.
  • You can freeze the assembled cake without decoration for up to one month; thaw overnight in the fridge before serving.
