For the Chocolate Sponge Cake:
- 4 large eggs
- ½ cup (100 g) granulated sugar
- ¼ cup (30 g) unsweetened cocoa powder
- ½ cup (65 g) all-purpose flour
- 1 tsp baking powder
- Pinch of salt
- 2 tbsp vegetable oil (or melted butter)
- 2 tbsp milk
- 1 tsp vanilla extract
For the Cream Filling:
- 1 cup (240 ml) heavy whipping cream
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
For the Chocolate Ganache:
- ½ cup (120 ml) heavy cream
- 100 g dark chocolate, chopped
- 1 tbsp butter (optional, for shine)
- Make the Sponge Cake – Preheat oven. Beat eggs and sugar until tripled in volume. Sift dry ingredients, fold in, add wet ingredients, pour into pan, bake.
- Roll the Cake – Invert hot cake onto towel, roll, cool.
- Make the Cream Filling – Whip cream, sugar, and vanilla until stiff peaks form. Spread on unrolled cake, re-roll.
- Make the Ganache – Heat cream, pour over chocolate, stir until smooth. Add butter for shine.
- Decorate – Pour ganache over cake, garnish as desired.
