For the Cake:

  • 4 large eggs
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ⅓ cup all-purpose flour
  • ¼ cup cocoa powder (unsweetened)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract

For the Cream Filling:

  • 1 cup heavy whipping cream (cold)
  • ½ cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 tsp vanilla extract

For the Chocolate Ganache Topping:

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • Optional Decoration:

    • White chocolate shavings or whipped cream swirls

Instructions

  1. Prepare the Cake Preheat oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it. In a mixing bowl, beat eggs and sugars until light and fluffy (about 5 minutes). Sift in flour, cocoa powder, baking powder, and salt. Gently fold until just combined. Stir in vanilla extract. Pour batter into the prepared pan and spread evenly. Bake for 10–12 minutes, or until a toothpick comes out clean.
  2. Roll the Cake While still warm, turn the cake onto a clean towel dusted with powdered sugar. Peel off parchment paper and roll the cake up in the towel (short end to short end). Let it cool completely while rolled.
  3. Make the Cream Filling Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip heavy cream until stiff peaks form. Fold whipped cream into the cream cheese mixture.
  4. Assemble the Roll Carefully unroll the cooled cake. Spread cream filling evenly. Roll the cake back up tightly without the towel. Place seam side down on a tray.
  5. Add Ganache Heat heavy cream until hot (not boiling) and pour over chocolate chips. Stir until smooth. Pour ganache over the roll, letting it drip down the sides.
  6. Decorate & Serve Garnish with chocolate curls, shavings, or whipped cream swirls. Refrigerate for at least 1 hour before slicing.
