  • 20g butter

Instructions

  1. Prepare the Tart Dough: In a food processor or mixing bowl, combine the cold cubed butter with powdered sugar, egg, all-purpose flour, and a pinch of salt. Blend or mix until the mixture forms a smooth dough. Wrap in cling film and chill in the refrigerator for at least 30 minutes to firm up.
  2. Shape and Bake Tartlets: Preheat the oven to 170°C (340°F). Press the chilled dough evenly into tartlet molds, making sure the bases and walls are well covered. Bake in the preheated oven until the tart shells turn lightly golden, about 15-20 minutes. Remove and let cool completely.
  3. Make the Pistachio Cream Filling: Warm the heavy cream gently in a saucepan until just simmering, then remove from heat. Stir in the pistachio paste until fully combined. Pour this warm mixture over the chopped white chocolate in a bowl and let sit for a minute to melt. Stir the mixture until smooth and glossy. Add the butter and a pinch of salt, along with green gel food coloring if desired, and blend until fully incorporated.
  4. Chill and Pipe Filling: Allow the pistachio cream to cool slightly but remain pipeable. Transfer the filling to a piping bag fitted with a suitable tip for creating tall, tree-like shapes.
  5. Assemble the Tartlets: Pipe the pistachio cream into the cooled tartlet shells in tall, conical shapes resembling Christmas trees.
  6. Garnish: Dust the tartlets lightly with powdered sugar to simulate snow and decorate with festive sprinkles to mimic ornaments on the trees.
  7. Serve: Serve immediately or chill briefly before serving for firmer texture. These tartlets are a delightful holiday treat for parties or dessert tables.
