Classic Homemade Zeppole Recipe

Dough:
- 1 cup water
- 6 tbsp unsalted butter
- 2 tbsp granulated sugar
- 1/4 tsp salt
- 1 cup all-purpose flour
- 4 large eggs

- Vegetable oil, for frying
- Powdered sugar, for dusting
- Make the dough (Pâte à Choux style): In a saucepan, bring the water, butter, sugar, and salt to a boil over medium heat. Once boiling, add the flour all at once and stir quickly with a wooden spoon until a smooth ball of dough forms and pulls away from the sides of the pan (about 1-2 minutes).
- Cool the dough: Remove from heat and let it cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition until the dough is smooth and sticky.
- Heat the oil: In a deep pot, heat about 2–3 inches of vegetable oil to 350°F (175°C).
- Fry the Zeppole: Use two spoons or a small cookie scoop to drop spoonfuls of dough into the hot oil. Fry in batches, turning occasionally, until golden brown and puffed (about 4–5 minutes).
- Drain and dust: Remove and drain on a paper towel-lined plate. While still warm, dust generously with powdered sugar.
