Egg Yolk Mixture:

  • 3 egg yolks
  • 100g sugar

Mascarpone Cream:

  • 250g mascarpone
  • 200ml heavy cream

Additional Ingredients:

  • 200ml strong coffee (cooled)
  • 200g ladyfinger biscuits (savoiardi)
  • Cocoa powder for dusting
  • Dark chocolate chunks (optional topping)

Instructions

  1. Whisk Egg Yolks and Sugar: In a bowl, whisk the egg yolks and sugar until light and creamy.
  2. Add Mascarpone: Add mascarpone and mix until smooth.
  3. Whip Cream: In another bowl, whip the cream until stiff peaks form, then fold it gently into the mascarpone mixture.
  4. Dip Ladyfingers: Dip each ladyfinger quickly into the coffee (do not soak too long!).
  5. Layer Ingredients: In a dish, layer dipped ladyfingers, then spread the mascarpone cream.
  6. Repeat Layers: Repeat layers (2-3 times) and finish with a layer of cream.
  7. Chill: Chill in the fridge for at least 4 hours (best overnight).
  8. Dust with Cocoa: Before serving, dust with cocoa powder and add chocolate chunks if you like.
