  • 1/2 cup coconut milk
  • 1 tablespoon lime juice
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish

For the Jasmine Rice

  • 1 cup jasmine rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook the Jasmine Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. Combine the rinsed rice, water, and a pinch of salt in a pot. Bring to a boil over medium-high heat, then reduce the heat to low and cover the pot. Let it simmer gently for 15 minutes until the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing the rice with a fork.
  2. Prepare the Coconut Curry Shrimp: Heat olive oil in a skillet over medium heat. Add the minced garlic and grated ginger, sautéing for 30 to 45 seconds until fragrant. Stir in the curry paste and cook for 1 minute to release its flavors. Pour in the coconut milk and bring to a gentle simmer. Add the shrimp, season with salt and black pepper to taste, and cook for 3 to 4 minutes until the shrimp turn pink and opaque. Stir in the lime juice just before removing from heat.
  3. Serve: Plate the fluffy jasmine rice and top it with the coconut curry shrimp. Spoon any extra sauce from the skillet over the top and garnish with freshly chopped cilantro for added freshness and color.
