Instructions

  1. Marinate the Chicken: In a bowl, combine the chicken strips with coconut milk, lime zest and juice, minced garlic, olive oil, salt, and black pepper. Mix well to ensure chicken is evenly coated. Allow it to marinate for at least 20 to 30 minutes to absorb the flavors.
  2. Cook the Chicken: Heat a skillet over medium-high heat. Add the marinated chicken strips and cook for 4 to 5 minutes on each side or until the chicken is cooked through, no longer pink inside, and lightly browned on the outside.
  3. Warm the Tortillas: Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side or microwave them wrapped in a damp paper towel until soft and pliable.
  4. Assemble the Tacos: Lay a warmed tortilla flat, place a handful of shredded lettuce or cabbage on top, add several chicken strips, and sprinkle with chopped fresh cilantro. Add any optional toppings such as diced avocado, sliced radishes, or a dollop of sour cream if desired.
  5. Serve: Serve the tacos immediately with lime wedges on the side for squeezing over the top to add extra citrus brightness.
