These Coconut Lime Chicken Tacos offer a vibrant and tropical twist on classic tacos. Ingredients

Scale

For the Chicken Marinade

  • 300g chicken breast or thighs, cut into thin strips
  • 2 tbsp coconut milk
  • Zest and juice of 1 lime
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp chili powder (optional)
  • Salt and pepper, to taste

For the Tacos

  • 46 small tortillas
  • 1/2 cup shredded cabbage or lettuce
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup diced pineapple or mango (optional, for sweetness)

Instructions

  1. Marinate the Chicken: In a bowl, combine the coconut milk, lime zest and juice, minced garlic, grated ginger, chili powder (if using), salt, and pepper. Add the chicken strips and toss well to coat evenly. Cover and let the chicken marinate for 20 to 30 minutes to absorb the flavors.
  2. Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken strips and cook them for about 4 to 5 minutes on each side until they are fully cooked through and have a beautiful golden-brown sear.
  3. Assemble the Tacos: Warm your tortillas either in a dry pan or microwave until soft and pliable. Lay a bed of shredded cabbage or lettuce on each tortilla. Add the cooked chicken strips on top, followed by a sprinkle of diced pineapple or mango if you like a hint of sweetness. Finish by garnishing each taco with fresh chopped cilantro.
  4. Serve: Serve the tacos immediately with lime wedges on the side for an extra burst of zesty flavor. They’re best enjoyed fresh and warm.

Notes

  • For a spicier kick, increase the chili powder or add fresh chopped chili to the marinade.
  • Substitute chicken thighs for breast if you prefer a juicier, more flavorful meat.
  • Use corn tortillas for a gluten-free option.
  • Diced pineapple or mango adds a lovely natural sweetness that complements the tangy lime and creamy coconut flavors beautifully.
  • Leftover chicken can be stored separately in the refrigerator for up to 2 days.
