Ingredients

Scale

For the Shrimp Marinade

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 1/2 cup coconut milk
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp lime zest
  • 1 tbsp olive oil or coconut oil
  • Salt and black pepper, to taste

For Grilling and Serving

  • Skewers (soaked in water if wooden)
  • Fresh cilantro or lime wedges, for garnish

Instructions

  1. Prepare the marinade: In a bowl, mix the coconut milk, lime juice, minced garlic, lime zest, olive or coconut oil, salt, and black pepper until combined to create a flavorful marinade.
  2. Marinate the shrimp: Add the peeled and deveined shrimp to the marinade and toss to coat evenly. Let the shrimp marinate for 15 to 20 minutes, ensuring not to exceed 30 minutes to keep the shrimp firm.
  3. Preheat the grill: Heat your grill or grill pan over medium-high heat until hot and ready for cooking.
  4. Skewer the shrimp: Thread the marinated shrimp onto soaked wooden skewers or metal skewers evenly to ensure even cooking.
  5. Grill the shrimp: Place the shrimp skewers on the hot grill. Grill each side for 2 to 3 minutes until the shrimp turns pink, becomes opaque, and develops slight char marks.
  6. Serve: Remove the shrimp from the grill, garnish with fresh cilantro leaves or lime wedges, and serve immediately as an appetizer or with rice or salad for a complete meal.

Notes

  • Do not marinate shrimp for longer than 30 minutes to avoid mushy texture from the acid in lime juice.
  • If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning on the grill.
  • This recipe can be doubled or halved easily depending on the number of servings needed.
  • For a spicier kick, add a pinch of red pepper flakes or finely chopped fresh chili to the marinade.
  • To keep the shrimp tender, avoid overcooking; shrimp cook quickly and should be pink and opaque when done.
