Instructions

  1. Prepare the Dredging Station: Set up three shallow bowls: one with flour seasoned with salt and pepper, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs. This setup allows for an efficient coating process and ensures even coverage for the shrimp.
  2. Coat the Shrimp: Take each shrimp and first dredge it in the seasoned flour, coating it evenly. Next, dip it into the beaten eggs to help the coating stick. Finally, press the shrimp into the coconut and panko breadcrumb mixture until well coated on all sides.
  3. Fry the Shrimp: Heat vegetable oil in a skillet over medium-high heat until it reaches about 350°F (175°C). Fry the shrimp in batches carefully to avoid overcrowding, cooking each side for 2–3 minutes or until they turn golden brown and crispy. Remove shrimp with a slotted spoon and drain on paper towels to remove excess oil.
  4. Make the Lime Chili Dip: In a small bowl, combine mayonnaise, sweet chili sauce, lime juice, and if desired, a pinch of cayenne pepper for added heat. Mix thoroughly until smooth and well blended.
