Ingredients

Scale

For the Shrimp:

  • 1 lb (450g) large shrimp, peeled and deveined
  • ½ cup all-purpose flour
  • ½ tsp salt
  • 2 eggs, beaten
  • 1 cup shredded coconut
  • ½ cup panko breadcrumbs
  • Vegetable oil, for frying

For the Lime Chili Dip:

  • ¼ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp lime juice
  • ½ tsp lime zest
  • Pinch of salt

Instructions

  1. Prepare the Dip: In a small bowl, combine the mayonnaise, sweet chili sauce, lime juice, lime zest, and a pinch of salt. Stir thoroughly until smooth. Cover and refrigerate the dip to allow the flavors to meld while you prepare the shrimp.
  2. Set Up the Breading Station: Arrange three bowls for the breading process – one with all-purpose flour mixed with salt, one with beaten eggs, and the third with a mixture of shredded coconut and panko breadcrumbs thoroughly combined.
  3. Bread the Shrimp: Pat the shrimp dry using paper towels to ensure the breading adheres well. Dredge each shrimp first in the seasoned flour, shaking off excess. Next, dip it into the beaten eggs, then coat generously with the coconut-panko mixture, pressing gently to adhere the coating.
  4. Fry the Shrimp: Heat about 2 inches of vegetable oil in a deep skillet or frying pan over medium-high heat until it reaches 350°F (175°C). Fry the shrimp in batches, avoiding overcrowding, for about 2–3 minutes per side, or until they are golden brown and crispy. Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain excess oil.
  5. Serve: Arrange the fried coconut shrimp on a serving platter. Serve immediately alongside the chilled lime chili dip for dipping. Enjoy this crunchy and flavorful appetizer warm.

Notes

  • Ensure shrimp are thoroughly dried before breading to prevent soggy coating.
  • Maintain oil temperature while frying for crispy shrimp and to avoid greasy results.
  • Can be prepared ahead by breading shrimp and refrigerating for up to 1 hour before frying.
  • For a spicier dip, add a dash of cayenne pepper or hot sauce to the lime chili dip.
  • Leftover shrimp are best enjoyed immediately but can be reheated in an air fryer for crispiness.
