Instructions

  1. Prepare the Dip: In a small bowl, mix mayonnaise, sweet chili sauce, lime juice, and chili flakes until well combined. Cover and chill in the refrigerator until ready to serve to allow the flavors to meld.
  2. Coat the Shrimp: Season the peeled and deveined shrimp with salt and pepper evenly. Dredge each shrimp first in the all-purpose flour, ensuring light coating, then dip into the beaten egg. Finally, coat each shrimp thoroughly in a mixture of shredded coconut and panko breadcrumbs for a crunchy outer layer.
  3. Fry the Shrimp: Heat vegetable oil in a frying pan over medium heat until hot. Fry the coated shrimp for about 2 to 3 minutes on each side or until they turn golden brown and crispy. Use a slotted spoon to remove the shrimp and drain them on paper towels to remove excess oil.
