Ingredients

Scale

Meat and Dairy

  • 1 lb ground turkey
  • 1 cup cottage cheese

Vegetables

  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced

Spices and Herbs

  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili flakes (optional)
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh cilantro, chopped

Instructions

  1. Prepare Aromatics: Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing them for 2–3 minutes until they are soft and fragrant, forming the base of your dish.
  2. Cook Turkey: Add the ground turkey to the skillet. Cook it thoroughly until browned, breaking it up with a spatula so it cooks evenly and crumbles nicely throughout the dish.
  3. Add Peppers and Spices: Stir in the diced red, yellow, and green bell peppers along with smoked paprika, cumin, chili flakes if using, salt, and black pepper. Continue cooking for 5–7 minutes, allowing the peppers to soften while still retaining a slight crisp texture.
  4. Incorporate Cottage Cheese: Remove the skillet from heat and fold in the cottage cheese gently until it is evenly combined with the turkey and vegetables, adding a creamy texture to the skillet.
  5. Garnish and Serve: Sprinkle the chopped fresh parsley and cilantro over the skillet. Serve hot either on its own or accompanied by a side of rice, quinoa, or warm pita bread for a complete meal.

Notes

  • For extra heat, increase the chili flakes according to your taste preference.

  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
