  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 tbsp ranch seasoning mix
  • ½ tsp smoked paprika
  • Salt & black pepper to taste

For the Veggies:

  • 1 lb baby potatoes, halved
  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tbsp ranch seasoning mix
  • 2 cloves garlic, minced
  • Salt & pepper to taste

Optional Garnishes:

  • Fresh parsley, chopped
  • Grated Parmesan cheese

Instructions

  1. Prepare Chicken: Season chicken with olive oil, ranch seasoning, paprika, salt, and pepper. Sear in a hot skillet for 3–4 minutes per side until golden, then transfer to oven at 400°F (200°C) for 15–20 minutes or until cooked through.
  2. Cook Potatoes: Toss baby potatoes with olive oil, garlic, ranch seasoning, salt, and pepper. Roast at 400°F (200°C) for 20 minutes.
  3. Add Green Beans: After 20 minutes, add green beans to the pan with potatoes. Roast another 10–12 minutes until tender.
  4. Assemble Plate: Serve chicken alongside roasted potatoes and green beans. Garnish with parsley and Parmesan if desired.
