Ingredients

Scale

Main Ingredients

  • 1 cup couscous
  • 1 cup boiling water or vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Lemon Tahini Drizzle

  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 23 tablespoons warm water (to thin)
  • 1 clove garlic, minced
  • Salt to taste

Instructions

  1. Prepare Couscous: Place the couscous in a bowl and pour boiling water or vegetable broth over it. Cover the bowl and let it sit for 5 minutes to absorb the liquid. Then fluff the couscous gently with a fork to separate the grains.
  2. Combine Salad Ingredients: In a large mixing bowl, combine the fluffed couscous with drained chickpeas, diced cucumber, halved cherry tomatoes, finely chopped red onion, and fresh parsley. Drizzle with olive oil and season with salt and black pepper, then toss everything together until well mixed.
  3. Make Lemon Tahini Drizzle: In a small bowl, whisk together tahini, lemon juice, olive oil, honey, minced garlic, and salt. Add warm water a little at a time to thin the sauce to a smooth, creamy consistency suitable for drizzling.
  4. Assemble and Serve: Spoon the couscous salad into serving bowls and generously drizzle with the lemon tahini sauce. Serve immediately for a fresh, flavorful meal.

Notes

  • For added protein, consider adding grilled chicken or feta cheese if not vegan.
  • Use vegetable broth instead of water for more flavor in the couscous.
  • Adjust the thickness of the tahini drizzle by adding more or less warm water.
  • Store leftover components separately to keep the cucumbers fresh and the drizzle creamy.
  • This recipe can be made gluten-free by using gluten-free couscous or substituting with quinoa.
