Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp Worcestershire sauce

Vegetables & Layers

  • 45 medium potatoes, thinly sliced
  • 1½ cups frozen mixed vegetables (corn, peas, carrots)

Sauce & Topping

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 2 tbsp melted butter
  • Optional: chopped parsley or green onions for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish to prevent sticking.
  2. Cook Beef: In a skillet over medium heat, brown the ground beef with diced onion and minced garlic until fully cooked. Drain any excess fat. Season the meat with salt, black pepper, smoked paprika, chili powder, and Worcestershire sauce, stirring well to combine.
  3. Mix Sauce: In a medium bowl, mix together the cream of mushroom or cream of chicken soup with the sour cream until the mixture is smooth and creamy.
  4. Layer Casserole: Begin assembling the casserole by layering half of the thinly sliced potatoes evenly in the bottom of the prepared baking dish. Next, spread half of the seasoned beef mixture evenly over the potatoes.
  5. Add Vegetables: Sprinkle half of the frozen mixed vegetables over the beef layer, then spread half of the creamy soup and sour cream sauce on top.
  6. Repeat Layers: Repeat the layering process with the remaining potatoes, beef mixture, vegetables, and sauce, creating a second even layer.
  7. Top with Cheese: Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top. Drizzle the melted butter over the cheese to help it brown beautifully while baking.
  8. Bake: Cover the dish tightly with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and continue baking for an additional 15 to 20 minutes, or until the casserole is bubbly and the cheese is golden brown.
  9. Serve: Let the casserole rest for 10 minutes before slicing to allow the layers to set. Garnish with chopped parsley or green onions if desired, then serve warm.

Notes

  • Slice potatoes thinly to ensure even cooking and tenderness.
  • Add diced jalapeños with the vegetables for an extra spicy kick.
  • For a lighter alternative, substitute ground beef with ground turkey or chicken.
  • Use cream of chicken soup for a milder flavor or cream of mushroom for a richer taste.
  • Covering the casserole while baking traps moisture; removing foil at the end helps brown the cheese.
