Ground Beef Mixture:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend)
  • 1 can (10 oz) diced tomatoes with green chilies, drained

Potato Layers:

  • 4 cups thinly sliced potatoes (about 3 large)
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 2 cups shredded cheddar cheese
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  1. Heat oven: Preheat to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook beef: In a skillet, brown ground beef with onion and garlic until no pink remains. Drain, then stir in taco seasoning and tomatoes.
  3. Prepare sauce: Whisk cream of mushroom soup with milk until smooth.
  4. Layer casserole: Place half of the potato slices in the dish, spread half the beef mixture over them, and top with 1 cup cheese. Repeat with the rest of the potatoes, beef, and sauce. Sprinkle paprika on top.
  5. Bake: Cover with foil and bake 45 minutes. Remove foil and bake another 15–20 minutes until potatoes are tender and cheese is melted.
  6. Finish & serve: Let cool slightly before serving. Garnish with parsley or green onions.
