Queso

  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp cream cheese
  • 1 small jalapeño, finely minced (optional)

Rolls

  • 1012 spring roll wrappers
  • 1/2 cup finely diced red bell pepper
  • 1/4 cup chopped green onions
  • Oil for frying

Instructions

  1. Prepare the Seafood Filling: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add the finely chopped shrimp and cook for 1–2 minutes until just pink. Stir in the crab meat, smoked paprika, chili powder, cumin, salt, and black pepper. Finish by squeezing in the lime juice. Remove from heat and let the mixture cool slightly.
  2. Make the Queso: In a saucepan, melt butter over medium heat. Whisk in the all-purpose flour and cook for 1 minute to form a roux. Gradually add milk, whisking continuously until the mixture is smooth and thickened. Stir in shredded mozzarella, cheddar cheese, cream cheese, and minced jalapeño until fully melted and creamy. Remove from heat and let the queso cool slightly.
  3. Combine Filling Ingredients: In a bowl, mix the seafood filling with the prepared queso, diced red bell pepper, and chopped green onions until well combined.
  4. Assemble the Rolls: Lay out the spring roll wrappers. Place about 2 tablespoons of the seafood and queso filling onto each wrapper. Roll tightly, folding in the edges, and seal them with a little water to ensure they stay closed during frying.
  5. Fry the Rolls: Heat oil in a deep fryer or wide skillet to 180°C (350°F). Fry the rolls in batches, turning occasionally, until they are golden brown and crispy—about 2–3 minutes per side. Remove with a slotted spoon and drain on paper towels.
