  • ½ cup baby spinach or arugula, chopped
  • 2 tablespoons fresh parsley, finely chopped

For the Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar or lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Cook the Orzo: Bring a pot of salted water to a boil. Cook orzo according to package instructions until al dente. Drain and rinse under cool water to stop cooking.
  2. Prepare the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar or lemon juice, honey, salt, and pepper until the dressing is emulsified and well combined.
