For the Orzo
- 1 cup orzo pasta
- Salt, for boiling water
For the Salad
- ½ cup dried cranberries
- 100 g goat cheese, crumbled
- ½ cup toasted walnuts or pecans, chopped
- ½ cup baby spinach or arugula, chopped
- 2 tablespoons fresh parsley, finely chopped
For the Dressing
- 3 tablespoons olive oil
- 1 tablespoon apple cider vinegar or lemon juice
- 1 teaspoon honey or maple syrup
- Salt and black pepper to taste
- Cook the Orzo: Bring a pot of salted water to a boil. Cook orzo according to package instructions until al dente. Drain and rinse under cool water to stop cooking.
