Ingredients

Scale

For the Skewers:

  • 8 oz (225g) brie cheese, cut into bite-sized cubes
  • 1 cup fresh cranberries
  • 1 cup mini mozzarella balls (optional for color contrast)
  • 2 tbsp chopped toasted walnuts (optional)
  • 1216 small appetizer skewers or toothpicks

For the Rosemary Honey Glaze:

  • 3 tbsp honey
  • 1 tsp fresh rosemary, finely chopped
  • ½ tsp lemon zest
  • 1 tsp lemon juice
  • Pinch of salt
  • Pinch of cracked black pepper

Optional Garnish:

  • Fresh rosemary sprigs
  • Flaky sea salt

Instructions

  1. Prepare the Glaze: In a small saucepan over low heat, warm the honey with chopped rosemary for 2–3 minutes, ensuring it does not boil. Remove from heat and stir in lemon zest, lemon juice, salt, and cracked black pepper. Let the mixture cool slightly to thicken and develop its flavors.
  2. Prepare the Brie: Cut the brie into evenly sized cubes for easy skewering. For cleaner, neater cuts, chill the brie in the refrigerator for 15–20 minutes before slicing.
  3. Assemble the Skewers: Thread one cranberry onto each skewer followed by a cube of brie and a mini mozzarella ball if using. If the skewers are longer, repeat this sequence once more to create stacked layers. Optionally, sprinkle chopped toasted walnuts over the assembled skewers for added crunch and flavor.
  4. Drizzle & Finish: Arrange the skewers neatly on a serving platter. Drizzle the rosemary honey glaze evenly over the top to add sweetness and aroma. Garnish with fresh rosemary sprigs and a light sprinkle of flaky sea salt for extra texture and visual appeal.
  5. Serve: Serve the skewers immediately at room temperature to enjoy the creamy texture of the brie and the bright burst of cranberries. This dish makes a perfect festive appetizer or holiday tapas bite.

Notes

  • Chilling the brie before slicing helps in making clean and uniform cubes.
  • Mini mozzarella balls are optional but add a nice color contrast and creaminess to the skewers.
  • Toasted walnuts provide a delightful crunch; you can substitute with pecans or omit if preferred.
  • Serve the skewers soon after glazing to preserve the fresh texture and appearance.
  • These skewers are best enjoyed at room temperature for optimal flavor and creaminess.
