For Cranberry Apple Topping:

  • 1 cup fresh cranberries
  • 1 large apple, diced
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp butter

For Apple Cider Glaze:

  • 1 cup apple cider
  • 2 tbsp Dijon mustard
  • 2 tbsp brown sugar
  • 1 tbsp balsamic vinegar

Instructions

  1. Oven Prep: Preheat oven to 375°F (190°C).
  2. Coat Pork: In a bowl, mix Dijon mustard, brown sugar, olive oil, thyme, garlic, salt, and pepper. Rub this mixture over the pork loin.
  3. Cooking: Roast the pork in a pan for 1–1¼ hours (about 20 minutes per pound) until it reaches an internal temperature of 145°F (63°C). Let it rest for 10 minutes.
  4. Make Topping: In a saucepan, melt butter and add cranberries, apple, brown sugar, cinnamon, and nutmeg. Cook until the fruits are soft, about 10 minutes.
  5. Glaze Prep: In another saucepan, simmer apple cider, Dijon mustard, brown sugar, and balsamic vinegar for 10 minutes until the mixture thickens into a glaze.
  6. Serve: Slice the pork loin, top with the cranberry apple mixture, drizzle with the apple cider glaze, and garnish with herbs before serving.
