Whipped Feta
- 8 oz (225 g) feta cheese
- ½ cup Greek yogurt (or cottage cheese for extra creaminess)
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 garlic clove, grated
- Black pepper to taste
Cranberry Layer
- 1 cup fresh or frozen cranberries
- 2 tbsp honey or maple syrup
- 2 tbsp orange juice
- Zest of ½ an orange
Hot Honey Drizzle
- 3 tbsp honey
- ¼–½ tsp red pepper flakes
- 1 tsp warm water (optional to thin)
Toppings
- Crushed pistachios or walnuts
- Extra orange zest
- Fresh thyme
- Make the Cranberry Layer: In a small saucepan, combine cranberries, honey, orange juice, and orange zest. Simmer for 6–8 minutes until cranberries burst and the mixture thickens. Remove from heat and let cool slightly.
- Make the Whipped Feta: Add feta cheese, Greek yogurt, olive oil, lemon juice, grated garlic, and black pepper to a food processor. Blend until the mixture is smooth, creamy, and fluffy. Spread this whipped feta onto a serving plate or bowl.
- Make the Hot Honey: In a small bowl, mix honey with red pepper flakes. Warm the mixture for 5–10 seconds in the microwave to make it easier to drizzle. If desired, stir in warm water to thin the drizzle consistency.
- Assemble the Dip: Spoon the slightly cooled cranberry mixture evenly over the whipped feta layer. Drizzle generously with the hot honey mixture. Garnish with crushed pistachios or walnuts, extra orange zest, and fresh thyme leaves.
- Serve: Serve immediately with pita chips, warm bread, crackers, or fresh vegetables for dipping.
Notes
- Use Greek yogurt for a tangy, creamy texture or substitute with cottage cheese for extra richness.
- Adjust the amount of red pepper flakes in the hot honey to control the heat level.
- Fresh cranberries are preferable but frozen cranberries work well too.
- Can be made ahead: prepare whipped feta and cranberry layers separately, then assemble before serving.
- Store leftovers refrigerated in an airtight container for up to 3 days.
