Ingredients

Scale

Chicken and Seasoning

  • 2 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt & black pepper, to taste

Sauce and Flavorings

  • 2 tbsp olive oil (or oil from sun-dried tomato jar)
  • 3 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 cup fresh spinach (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Season chicken: Pat the chicken breasts dry with paper towels and season both sides evenly with garlic powder, paprika, salt, and black pepper to infuse flavor and enhance the crust during cooking.
  2. Sear chicken: Heat olive oil or sun-dried tomato oil in a large skillet over medium-high heat. Add the chicken breasts and sear each side for 5 to 6 minutes until they develop a golden-brown crust and are cooked through. Remove chicken from the skillet and set aside to rest.
  3. Build flavor base: Reduce the heat to medium. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the chopped sun-dried tomatoes to release their rich flavors.
  4. Create creamy sauce: Pour in the heavy cream and chicken broth, stirring to combine. Add grated Parmesan cheese and Italian seasoning, then simmer the mixture for 4 to 6 minutes until the sauce thickens and becomes velvety.
  5. Add spinach (optional): Stir in fresh spinach and cook until wilted, adding a fresh and vibrant note to the creamy sauce.
  6. Combine: Return the cooked chicken breasts to the skillet, spoon the creamy sauce over them, and simmer for an additional 3 to 4 minutes to meld the flavors and ensure the chicken is warm and coated.
  7. Garnish & serve: Garnish with fresh basil or parsley leaves and serve immediately while hot for the best taste and presentation.

Notes

  • You can substitute heavy cream with half-and-half for a lighter sauce, but it will be slightly less creamy.
  • Using oil from the sun-dried tomato jar adds extra depth of tomato flavor and richness.
  • For a low-carb option, skip the chicken broth or replace it with vegetable broth.
  • Ensure not to overcook the chicken to maintain juiciness—internal temperature should reach 165°F (74°C).
  • Fresh spinach is optional but adds color and nutrients.
