Ingredients

Scale

Feta Spread

  • 1 cup feta cheese, crumbled
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 clove garlic, minced
  • Black pepper to taste

Roasted Vegetables

  • 1 zucchini, sliced
  • 1 eggplant, sliced
  • 1 bell pepper, sliced
  • 1/2 red onion, sliced
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil (for roasting)
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste

Additional Mezze Items

  • 1/2 cup cucumber, sliced
  • 1/3 cup mixed olives (Kalamata & green)
  • 1/4 cup hummus
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 1 tbsp balsamic glaze (optional)
  • 1 baguette or pita bread, sliced and toasted

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to prepare for roasting the vegetables evenly and to perfection.
  2. Prepare Vegetables: In a large bowl, toss the sliced zucchini, eggplant, bell pepper, red onion, and cherry tomatoes with 2 tablespoons of olive oil, dried oregano, salt, and black pepper ensuring all pieces are well coated.
  3. Roast Vegetables: Spread the vegetable mixture evenly on a baking sheet and roast in the preheated oven for 20 to 25 minutes until the veggies are tender and slightly caramelized, stirring halfway through for even roasting.
  4. Make Feta Spread: In a separate bowl, blend the crumbled feta cheese, plain Greek yogurt, 2 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, and black pepper until the mixture is smooth and creamy with no large chunks.
  5. Assemble Mezze Board: Spread the creamy feta mixture onto a large serving board or place it in a bowl at the center. Arrange the roasted vegetables, cucumber slices, mixed olives, and hummus artistically around the feta.
  6. Add Fresh Herbs and Glaze: Sprinkle fresh chopped parsley and mint evenly over the assembled board to add brightness and fresh flavor. Drizzle balsamic glaze over the board if desired for a touch of sweetness and acidity.
  7. Serve: Serve the mezze board with sliced and toasted baguette or pita bread on the side for dipping and scooping, allowing guests to enjoy a variety of textures and flavors in each bite.

Notes

  • For a vegan version, substitute feta cheese and Greek yogurt with vegan alternatives such as cashew cheese or tofu-based spreads.
  • Adjust roasting time depending on the thickness of vegetable slices to prevent burning or undercooking.
  • Balsamic glaze is optional but adds a nice sweet tang that complements the creamy feta and roasted veggies.
  • Use fresh herbs like parsley and mint generously to enhance freshness and aroma.
  • Serve immediately after assembling for the best texture and flavor experience; leftover veggies can be stored separately in the fridge.
