Ingredients

Scale

Sweets and Veggies

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup baby spinach
  • Fresh parsley or dill, for garnish

Proteins and Dairy

  • 1 lb chicken breast, cut into bite-sized pieces
  • ¾ cup crumbled feta cheese
  • ½ cup milk or cream

Grains

  • 1 cup uncooked orzo

Liquids and Fats

  • 2 tbsp olive oil, divided
  • 2 cups chicken broth
  • 1 tbsp lemon juice

Seasonings

  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

Instructions

  1. Roast the sweet potatoes: Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20 to 25 minutes until they are tender and caramelized.
  2. Cook the chicken: While the potatoes roast, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken pieces, season with salt and pepper, and cook until they are golden brown on the outside and cooked through inside, about 6-8 minutes. Remove the chicken from the pan and set aside.
  3. Cook the orzo: In the same skillet, add the minced garlic and uncooked orzo. Toast them together for one to two minutes until fragrant. Pour in the chicken broth, then simmer, stirring occasionally, until most of the liquid is absorbed and the orzo is tender, about 8 to 10 minutes.
  4. Make it creamy: Stir in the milk or cream, crumbled feta cheese, and lemon juice. Continue cooking for 2 to 3 minutes, stirring gently until the sauce is creamy and well combined.
  5. Combine everything: Return the cooked chicken and roasted sweet potatoes to the skillet with the orzo and creamy feta sauce. Add the baby spinach and stir gently until the spinach wilts and all ingredients are coated evenly in the sauce.
  6. Serve: Garnish with fresh parsley or dill and an extra sprinkle of feta cheese. Serve warm and enjoy this hearty, delicious meal.

Notes

  • You can substitute milk or cream with a plant-based alternative for a lighter or dairy-free version.
  • Feel free to add more herbs like oregano or thyme for extra flavor.
  • For a spicier kick, add a pinch of red pepper flakes when cooking the chicken.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
