  • 1 cup fresh spinach, roughly chopped
  • 1 cup heavy cream or cooking cream
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Season the Chicken: Pat the chicken dry and season both sides with salt, black pepper, and garlic powder to ensure a flavorful base.
  2. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and sear for 5–6 minutes per side until the exterior is golden brown and the chicken is fully cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté Garlic: In the same skillet, melt the butter over medium heat and add the minced garlic. Sauté for about 30 seconds until the garlic becomes fragrant but not browned.
  4. Cook Spinach: Add the roughly chopped spinach to the skillet and cook for about 2 minutes until wilted, stirring occasionally.
  5. Prepare Cream Sauce: Pour in the heavy cream, fresh lemon juice, and lemon zest. Stir well and let the mixture simmer for 3–4 minutes until it slightly thickens.
  6. Add Parmesan and Season: Stir in the grated Parmesan cheese, then season the sauce with salt and black pepper according to your taste.
  7. Combine Chicken and Sauce: Return the cooked chicken to the skillet, spoon the creamy lemon spinach sauce over it, and simmer for an additional 2–3 minutes to heat through and meld the flavors.
  8. Garnish and Serve: Sprinkle chopped fresh parsley over the dish and add lemon slices if desired before serving to enhance the fresh, vibrant flavors.
