  • 1 cup unsweetened almond milk (or any milk of choice)
  • 2 tbsp honey (or maple syrup for vegan version)
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional, for extra nutty flavor)
  • A pinch of salt
  • 12 drops of green food coloring (optional, for color)

Instructions

  1. Blend Pistachios: Place the pistachios in a high-speed blender or food processor. Blend until they form a fine paste. This may take a few minutes. Scrape down the sides as needed. Add Greek yogurt, protein powder, almond milk, honey, vanilla extract, almond extract, and salt to the pistachio paste. Blend until smooth and creamy.
  2. Color (Optional): If you want the traditional green color, add a drop or two of green food coloring. Blend again until well combined. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes). Transfer the churned ice cream to a freezer-safe container.
