Instructions

  1. Cook the Pasta: Cook pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water to adjust sauce consistency later.
  2. Prepare the Sauce: Heat olive oil in a large skillet over medium heat. Sauté finely chopped onion until soft and translucent, about 5 minutes. Add minced garlic and cook for 1 more minute until fragrant. Stir in chopped roasted red peppers and smoked paprika, cooking for 2 to 3 minutes to combine flavors.
  3. Blend the Sauce (Optional): For a smoother, creamier sauce, transfer the red pepper mixture to a blender and blend until smooth. Return the sauce to the skillet once blended.
  4. Combine Pasta & Sauce: Stir in the heavy cream and cooked pasta into the sauce. Add reserved pasta water a little at a time to loosen the sauce until you reach your preferred consistency. Season generously with salt and freshly ground black pepper to taste.
  5. Add Feta & Serve: Gently fold in the crumbled feta cheese so it starts to melt slightly into the warm pasta. Garnish with fresh parsley or basil and any optional add-ins like cherry tomatoes, spinach, or toasted pine nuts. Serve immediately while warm.
