Filling
- 2 cups cooked chicken, finely chopped or shredded
- 120 g (4 oz) cream cheese, softened
- 1–2 jalapeños, finely diced (seeds removed for less heat)
- ½ cup shredded mozzarella or cheddar cheese
- 2 tbsp green onions, chopped
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & black pepper, to taste
Egg Rolls
- 10–12 egg roll wrappers
- Olive oil spray or brush
Optional Dipping Sauces
- Sweet chili sauce
- Ranch or garlic sauce
- Sriracha mayo
- Make the filling: In a bowl, thoroughly combine the chopped or shredded cooked chicken with softened cream cheese, finely diced jalapeños (removing seeds if you prefer less heat), shredded mozzarella or cheddar cheese, chopped green onions, garlic powder, paprika, salt, and black pepper. Mix until well blended to create a creamy, flavorful filling.
- Assemble egg rolls: Lay one egg roll wrapper out in a diamond shape on a clean surface. Spoon 2 to 3 tablespoons of the prepared filling near the bottom corner of the wrapper. Fold the bottom corner over the filling, then fold in the left and right sides tightly. Roll the wrapper upward firmly to enclose the filling completely. Seal the top edge with a small amount of water to ensure it sticks and prevents the roll from opening during cooking.
- Air fry the egg rolls: Preheat your air fryer to 190°C (375°F). Lightly spray or brush the surface of each egg roll with olive oil on all sides to promote crispiness. Place the egg rolls seam-side down into the air fryer basket without overcrowding. Air fry the egg rolls for 8 to 10 minutes, turning them halfway through the cooking time to ensure an even golden-brown and crispy texture.
- Serve: Once cooked, let the egg rolls rest for 2 minutes to cool slightly. Serve them hot with your choice of dipping sauce such as sweet chili, ranch, garlic sauce, or sriracha mayo for added flavor.
Notes
- For extra crispiness, lightly spray the egg rolls with olive oil again halfway through the cooking process.
- To make a buffalo version, add 2 tablespoons of buffalo sauce to the filling mixture before assembling.
- If you prefer a milder heat, substitute jalapeños with diced bell peppers.
- You can bake the egg rolls in an oven at 220°C (425°F) for 15–18 minutes, flipping once midway, as an alternative to air frying.
- Ensure you don’t overcrowd the air fryer basket to allow even cooking and crisping.
- Use softened cream cheese for easy mixing and better texture.
