Ingredients

Scale

For the Cheesecake Filling

  • 8 oz (225 g) cream cheese, softened
  • ¼ cup granulated sugar
  • ½ tsp vanilla extract
  • 2 tbsp heavy cream

For the Cotton Candy Coating

  • 1 cup mini marshmallows or cotton candy pieces
  • ½ cup crushed graham crackers or crispy rice cereal
  • 2 tbsp powdered sugar

For Frying (Optional)

  • ½ cup all-purpose flour
  • 1 large egg, beaten
  • ½ cup panko breadcrumbs or crushed cereal
  • Oil for frying (enough for deep frying)

Instructions

  1. Prepare the Cheesecake Filling: In a bowl, beat cream cheese, sugar, vanilla extract, and heavy cream together until the mixture is smooth and creamy. Chill the mixture for 15–20 minutes to help it firm up slightly, which will make shaping easier.
  2. Shape the Bombs: Using a spoon, scoop 1 to 2 tablespoons of the cheesecake mixture and roll it gently between your palms to form small balls. Place these balls on a parchment-lined tray and refrigerate them for 10 minutes to set.
  3. Coat the Balls: Roll each chilled cheesecake ball in the crushed mini marshmallows or cotton candy pieces first, then in the crushed graham crackers or crispy rice cereal to ensure an even coating. Lightly dust each coated ball with powdered sugar for a sweet finish.
  4. Optional Frying: For an added crispy texture, coat each ball by first rolling it in all-purpose flour, then dipping into the beaten egg, and finally rolling in panko breadcrumbs or crushed cereal. Heat oil to 350°F (175°C) and fry the balls for 1 to 2 minutes until they turn golden brown. Drain on paper towels to remove excess oil.
  5. Serve: Chill the coated or fried cheesecake bombs briefly before serving to achieve the perfect melty yet crunchy texture reminiscent of cotton candy with a cheesecake surprise inside.

Notes

  • For a gluten-free option, use gluten-free flour, gluten-free graham crackers, and gluten-free panko or cereal.
  • If cotton candy pieces are unavailable, mini marshmallows work well for the coating.
  • Frying is optional but provides an extra crunch and golden color.
  • Keep the cheesecake bombs chilled until just before serving to maintain their shape.
  • Handle the balls gently to avoid melting the cheesecake too much from warm hands.
