Ingredients

Scale

For the Flatbread Base

  • 2 large flatbreads (naan or artisan-style)
  • 2 tablespoons olive oil
  • 1 clove garlic, minced

For the Toppings

  • 8 oz brie cheese, sliced
  • ½ cup dried cranberries
  • ½ cup walnuts, roughly chopped
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Prepare the Flatbread: Mix the olive oil and minced garlic together. Brush this mixture evenly over both flatbreads and place them on the prepared baking sheet.
  3. Assemble Before Baking: Arrange the sliced brie evenly over each flatbread. Sprinkle the dried cranberries and roughly chopped walnuts on top. If using, add fresh thyme leaves for extra aroma and flavor.
  4. Bake Until Crispy: Bake in the preheated oven for 10 to 12 minutes, or until the flatbread becomes crisp and the brie cheese is melted and bubbly.
  5. Finish & Serve: Remove the flatbreads from the oven and immediately drizzle with honey. Season with freshly ground black pepper to taste. Slice into portions and serve warm to enjoy the melty, crispy combination.

Notes

  • For a nuttier flavor, try toasting the walnuts lightly before chopping and adding as topping.
  • Naan bread works wonderfully for this recipe, but you can substitute with other artisan-style flatbreads.
  • If you prefer a vegan version, substitute brie with a plant-based cheese and use maple syrup instead of honey.
  • Fresh thyme is optional but adds a lovely herbal hint that complements the cranberries and walnuts.
  • This dish is best served immediately to enjoy the contrast between crispy flatbread and melted cheese.
