Instructions

  1. Prepare the Chili Maple Drizzle: In a small bowl, whisk together the maple syrup, chili flakes, lemon juice, and olive oil. Set this spicy-sweet sauce aside to let the flavors meld.
  2. Cut and Prepare Phyllo Sheets: Cut the phyllo sheets into rectangular pieces suitable for rolling the feta batons. Brush each rectangle lightly with melted butter or olive oil, which helps the pastry crisp up beautifully when fried.
  3. Roll the Feta: Place a baton of feta cheese at the edge of each prepared phyllo rectangle. Roll tightly around the feta, folding in the sides as you go to fully encase the cheese, preventing leakage during frying.
  4. Brush and Garnish: Brush the outside of each roll with additional melted butter to ensure a golden crust. If desired, sprinkle sesame seeds on top for extra flavor and crunch.
